A Breeze
Here is a summer picnic recipe. Savory chicken salad! I encourage you to experiment with herbs in this salad. Blend your favorites, chop finely and add to the final mixture. Fresh herbs always much such a difference and you don't even need a garden to grow them! Small pots in the window can provide you with fragrant herbs all year long.
- 3-4 chicken breasts, baked or grilled
- 1 bag dried cranberries
- 3-4 celery stalks, leafy parts included
- good mayonnaise
- salt & pepper
In a food processor, grind the chicken into a coarse texture. Empty into bowl. In the same processor bowl, grind cranberries and celery into a relish consistency. Mix all together. Season with salt and pepper and add mayonnaise until the desired consistency. For salads, leave slightly "drier" and for sandwiches, use more mayo.
